Hillbilly-Approved Campfire Nachos

There’s something magical about nachos under the stars. They’re quick, customizable, and almost foolproof, most of the time. This is one recipe that deserves a permanent spot in your trail cooking kit.

Ingredients:
1 bag of tortilla chips (sturdy ones—no sad, crumbly chips allowed)
2 cups shredded cheese (Cheddar, Colby Jack, or whatever melts best)
1 can black beans, drained and rinsed
1 cup cooked protein (ground beef, chicken, or pulled pork)
½ cup diced onions
½ cup diced tomatoes
1 jalapeño, sliced (optional but recommended)
Foil for cooking
Instructions:
Fire up your camp stove or prep a low, steady campfire.
On a cast-iron skillet or heavy-duty foil packet, spread a layer of chips.
Add cheese, beans, meat, and toppings.
Repeat layers until you’re out of chips or patience.
Cover loosely with foil and let heat until cheese is melted and gooey (about 5–10 minutes).
Top with salsa, sour cream, or guac if you’re fancy.
Eat immediately—preferably before someone else does.
Pro Tip: Build individual foil packets if you’ve got a crew. Less fighting, more eating.
